Pink Lemon Cupcakes Recipe


This next cupcake recipe will remind you of summer as it has a really refreshing flavor: lemon. If you don’;t like your cupcakes with much cream, then just follow this recipe as it is a cupcake with 2 layers and it is much lighter, then a regular one. The outcome will look great and you won’;t have to worry about the frosting melting on the sides of the cupcake. The ingredients you will need to make the cupcake are:

  • one and a half sticks of unsalted butter (softened);
  • one cup of sugar;
  • 3 eggs;
  • half a teaspoon of baking powder;
  • half a teaspoon of baking soda;
  • a pinch of salt;
  • one cup of milk;
  • 2 tablespoons of lemon zest;
  • 2 tablespoons of fresh lemon juice;
  • powdered sugar;

For the pink lemon frosting prepare:

  • 4 cups of sugar (powdered);
  • half a cup of unsalted butter (softened);
  • 2 tablespoons of fresh lemon juice;
  • one teaspoon of lemon zest;
  • 2 tablespoons of milk gel dye (pink);
